We source from small, family-owned farms in the highlands of El Salvador, where altitude, microclimate, and generational knowledge combine to produce coffees with genuine complexity. We don’t blend farms or obscure origins. Every lot we offer can be traced to a specific place, a specific harvest, and a specific family.
We are intentional about how we grow. We started with one farm a farm we know deeply and we will expand only as we find partners who share our values. For wholesale buyers and specialty roasters, that traceability isn’t just a story. It’s a selling point, a sourcing advantage, and a commitment you can stand behind.

Finca El Jaguar – Our Partner Farm
The Place
Our Our founding farm partner and the source of every Aroma Madre lot available today. Finca El Jaguar has been farmed by the Martinez family for years, at elevations between 1,550 and 1,725 meters in the Cordillera Alotepec-Metapán. The farm produces Gesha, Pacamara, and Catuí using a 100% washed process with 60–70 hours of natural fermentation.

The People
Jose Armando Martinez and his family have farmed these 43.2 acres for years. The farm is entirely family-managed, and every decision from harvest timing to fermentation length reflects a deep familiarity with this specific land.
The Process
All coffee from Finca El Jaguar is processed using a 100% washed (lavado) method, with natural fermentation lasting 60 to 70 hours. This extended fermentation, paired with the farm’s altitude and cool nights, produces cups that are clean, structured, and notably sweet characteristics that score consistently above 83 SCA and have reached 86.00 for the farm’s Pacamara lots.
